Their 4 hectares of old vines are farmed organically, biodynamically and with minimal intervention. Vines are 85 years in age in black schist soils. Spontaneous fermentation with wild yeasts and carbonic maceration in stainless steel. Bottled with “a bit of leftover CO2 to further protect the wine”, unfined and unfiltered. Transparent red-violet in colour, with aromas of black cherry, garrique, peppermint, summer woods. Raspberry, black cherry, pomegranate, black pepper, grilled herbs, fresh acidity meld with black tea tannins. Cranberry and strawberry infuse the spicy finish.
