Vineyards are 25-30 years in age, with clay, marl and Kimmeridgian Limestone soils. Spontaneous fermentation with indigenous yeasts, aged on the fine lees in stainless steel for 6 months. Pale gold in colour, with aromas of chalky minerality, lemon, granny smith apple, citrus blossom, trace of ozone. Keen acidity, lemon, ginger and green pear diffuse over a chalky mineral backbone. Grapefruit and lemon zest amplify the flinty mineral finish.
