We discussed the Terroir of Chablis through the lens of Domaine Long-Depaquit. The history of their monopole "Moutonne" in Chablis Grand Cru. Then we went to the Côte de Beaune and discuss the village of Pommard. Clos des Ursulines is a monopole lieu-dit of Domaine du Pavillon on the southern end of the village bordering Volnay. 🍷 We tasted 2018 Domaine Long-Depaquit Chablis 1er Cru Les Vaillons, 2015 Domaine Long-Depaquit Chablis Grand Cru Moutonne, and 2018 Domaine du Pavillon Pommard Clos des Ursulines.
