⭐️90/100⭐️ Domaine de Chassorney Volnay “Qvevris”, 2018 📍Saint-Romain, Côte-d’Or, Bourgogne, France🇫🇷 🍇 100% Pinot Noir ⚡️13% Tasted: August 2020 A throwback to a time with the restaurants still running… This delicious wine from Mr. Cossard, served at Noma. Solid night! Frédéric Cossard established Dom. de Chassornay in 1996, which he runs with his partner Laure, from where they cultivate all vines on their own with biodynamic principles. Besides the domaine, they also run a négociant winery, “Frédéric Cossard”. Fred’s impressive network in Bourgogne assures him high quality, organic/biodynamic, grapes from a great spectrum of the most beloved areas in the region (including some grapes from Jura). - Négoce wines and domaine wines are vinified with same care, always with whole clusters and use of tonneaux, old barrique, concrete and qvevri. Harvested from a village-classified area at the bottom om the 1er Cru plot of “Les Lurets” (in the southern Volnay) planted with biodynamically cultivated old vines. The wine undergoes a long, natural fermentation with whole clusters and ages 10 months in qvevri. 
A qvevri is a big egg-shaped clay “pot”, like amphora, but these are sealed with beeswax (often) on the outside and buried underground or integrated in the floor of the cellar. Cossard uses sizes of 900-1400 litres. No sulphur added. The aromas are expressive and balanced somewhere in between the beauty and the dirty. Dark, fresh cherry and raspberry (also a bit candy-like), red perfumed flowers and hibiscus, all combined with a strong earthiness, white are mushrooms, cloves, stable and nail polish. Power on the fruit but quite reductive and definitely animalistic. Very interesting! The palate is more relaxed: Fresh and pure with mild powdery tannins and great acidity. Raspberry, cranberry, pomegranate and herbs.
