This masterpiece of an orange wine from Tom Lubbe (aka. Mr. Matassa) made from the super aromatic Muscat de Alexandria variety was the first wine pairing from our visit at Noma a few days ago.
Paired with fresh, raw flowers and greens followed by an oyster serving, candied beets and “The Butterfly”. 
It was just excellent! The vines are all organic, and the following vinification all natural with indigenous yeasts and no fining and filtration. The must macerates for 35 days followed by maturation in old barrels. Super expressive and aromatic nose on this deep amber colored juice. The quite typical orange wine scents of kombucha, orange peel, fermented apple and apricot are very expressive in this wine, but the perfect compliments from notes of dried peach, fresh elderflower, beeswax, freshly cut grass, dill and flower power makes it further complex and exciting.
The palate has these powdery tannins as you’d find in black tea steeped too long. Together with the quite rich body and the acidity, the whole texture is superbly balanced. Dried mango, tangerine, fresh stone fruit and lemon peel with a herbal touch, a bit of acacia and a long and super mineral finish.
Once again, Tom Lubbe delivers one of the best and most elegant orange wines on the market.
