Minimal intervention is applied in both the vineyard and cellar. Grapes are from the Imola estate Bacchilega vineyard, planted in 1980, with clay soils 100 meters in elevation. Fermented with native yeasts in Georgian amphorae, with skin contact for 95 days, aged in Georgian amphorae. Deep gold in colour, with aromas of lemon, orange zest, vanilla cake, caramel, and saline minerality. Dried apricot, Sicilian orange cake, a drizzle of salted caramel and fresh acidity are framed by green tea tannins. Citrus zest, nuts and fig linger between each creamy sip.
