We discussed the history of the Billecart-Salmon house, which is the oldest continuously family-run house in Champagne. Mathieu explained their approach with grape growers. Then we dove deep into Cuvée Nicolas Francois by tasting the 2002 and 2006. Mathieu explained how they use blind tasting to focus on quality. He covered malolactic fermentation, barrel aging base wines, aging under cork versus crown cap, and dosage. Finally, we discussed drinking windows and how it is really about personal preference and learning that can inform the right buying decisions.
