In Chablis, unlike the rest of Burgundy, the Premier (1er) Cru status is for the entire appellation. There are 40 vineyard sites or climats in Chablis 1er Cru. Séchet is one of those. Dauvissat is a traditional producer with low yields. All wines are made and aged in oak with some portion being new each vintage. This was tasted @zachysauctions lunch @lebernardinprive during the @lapaulee Auction· 👁 Pale lemon color· 👃 Medium intensity on the nose. Aromas of acacia, white flowers, lemon curd, lemon peel, reduction, matchstick, slate, and chalk· 👄 The wine is dry, high lively acidity, medium alcohol, and medium- body. Great texture on the palate. A medium length finish of slate and lemon curd· 🔔 This is a subtle and nuanced wine that is still very young. It paired well with the wonderful food from La Bernadin. The highlight of the wine is the tension on the palate, great acidity and overall texture from lees aging. This will continue to improve with time in cellar. There is Chardonnay and then there is Chablis.
