More specifically Guillaume d'Angerville loved to taste wine blind at a restaurant in Paris. He had 1 rule it cannot be from Burgundy. One day the Sommelier served him Stéphane Tissot's Arbois Chardonnay blind. He told the Sommelier that he forgot the rule about no 🚫 Burgundy. He may not have blinded the wine correctly😎, but this led to him setting up this Domaine. Savagnin is sourced primarily from two parcels because of their old soils rich in Jurassic marl. The Jurassic marl is very different than the marl you find in Burgundy. The marl in Burgundy is white marl while in the Jura there is gray and blue marl. The wine is fermented in 500L barrels and ages in neutral 350L barrels for ten months· 👁 Pale lemon color· 👃 Medium+ intensity on the nose. Aromas of white sesame, nutty, marzipan, ripe yellow apple, chalk, lemon zest, hay, and chamomile tea· 👄 The wine is dry, medium+ acidity, medium alcohol, and full body. Really weighty on the palate. A medium+ finish of marzipan and chalk· 🔔 Love the origin story of the Domaine. In Blind, We Trust 😎. This is a great example of ouillé style (aka non-oxidized) of Savagnin. It really showcases the grape variety without a lot of makeup and highlights it's natural nuttiness. Clearly Domaine du Pélican is bringing their Burgundian winemaking approach and prowess to the Jura. These wines will continue to evolve and improve with time in the cellar. Beautiful wine 😍
