NV Case Paolin - Asolo Prosecco Superiore Brut (89 pts) @dnswines @dionysigrevenitis · 🙋‍♂️ What are your thoughts on Prosecco❓· ℹ️ This wine is 💯 Glera from Trevisio, Italy. Hand harvested from hillside vineyards of Montello. Grape must receives skin contact for 3-5 hours. Primary fermentation takes place in steel tank. The secondary fermentation takes place in a pressurized tank (Martinotti Method / Charmant Method) for 45 days. Residual sugar is 7 g/l· 👁 Pale lemon color. Persistent medium bubbles· 👃 Medium+ intensity on the nose. Aromas of ripe bartlett pear, yellow apple, melon, acacia, and orange blossom· 👄 The wine is dry, medium acidity, medium alcohol, and medium body. A lot more concentration and heft on the palate. A medium length finish of ripe pear and florals· 🔔 Prosecco is not my go to sparkling wine, BUT my wife loves it. Therefore I am always on the lookout for something that I could enjoy with her and this fits the bill. It has great concentration on the palate. Also, the residual sugar is balanced nicely against the weightier body and solid acidity. I need to check out their Col Fondo (meaning 'with sediment') Prosecco, which should be a bit more in my wheelhouse.
