Of San Salvatore’s 110 hectares, the majority is devoted to vegetable farming and woodlands. Vineyards comprise 22.5 hectares, and there are 10 hectares of olive groves. The estate is certified organic and uses biodynamic methods. The water buffalo that roam the property are the sole source of fertilizer used on the vines, along with milk for mozzarella production. Solar powers the winery. Vineyards are 490-650 ft. in elevation, on south/southwest facing slopes. Aged in stainless steel tanks for about 8 months. Inky red violet in colour with aromas of black cherry, blueberry, baked plum, spice and a trace of chocolate. Juicy blackberry, blueberry, black currant, raspberry, pomegranate, tobacco, a shake of black pepper and trace of smoky earth are supported by silky, firm tannins and fresh acidity. A streak of lead minerality runs thru the ripe, dark fruit and spice on the velvety finish.
