Each village fruit is selected to bring something unique to the wine. Undergoes full malolactic fermentation in stainless steel. 6.5 g/l of residual sugar (dosage)· 👁 Medium lemon color· 👃 Medium intensity on the nose. Aromas of citrus, lemon, lime, yeast, custard, biscuit, and preserved lemon· 👄 The wine is dry, high acidity, medium alcohol, and medium body. Good chalky texture. The flavors on the palate matched the nose. The finish is medium- length dominated by very tart citrus flavors· 🔔 This Champagne was simply not in the same class as others tasted. I respect the laser-like acidity, but it was lacky some finesse and aromatics to stand out. Clearly made in a reductive way that may lead to this needing cellaring or even air to come into it's own. I will say that Delamotte Champagne has NEVER wowwed, which is so bizarre because Salon is always on point. Salon while stainless steel is usually no malolactic fermentation, could this be the 🔑❓
