The wine is 💯 Savagnin from various parcels across the Domaine. The vineyards are all Biodynamically farmed with an average vine age of 80 years old. Indigenous yeast fermentation and aged in large old wooden vats for a minimum of 30 months. The wine is bottled unfined, unfiltered, and without the addition of SO2· 👁 Medium+ lemon color and cloudy· 👃 Medium+ intensity on the nose. Aromas of preserved lemon, nectarine, orange blossom, black licorice, lemon verbena, Marcona almond, and sea brine· 👄 The wine is dry, medium+ acidity, medium+alcohol (14%), and full body. The finish long and concentrated notes of citrus, verbena, and salinity· 🔔 The wines of Jean-François Ganevat command a premium for a reason. This wine has an abundance of concentration and texture to it. Made in a topped up (Ouillé) style with no Flor or oxidative notes. This wine is bold, and it commands to be consumed with food. Between the Domaine and their Negociant label, they can make up to 100 Cuvées in a given year. It is hard to keep track, but you know you are always getting quality even if it is something esoteric.
