Soils are a combination of rocky schist, marne and galestro. Farming is low intervention, organic and follows the phases of the moon. “De-stemmed, 2 days skin contact. Basket pressed. Natural ferment in open top vats w/o temperature control, yeast or sulfur. Aged in combination of stainless steel and resin tanks.” Bottled in late Spring, unfiltered. Gold in colour, with aromas of lemon, hay, wildflowers and a wisp of funk. Mango, nectarine, plum, saline minerality and a nutty streak are glossed by citrus acidity. Apricot, hard lemon candy, butterscotch and orange rind comprise the lengthy, creamy finish. Engaging, exciting, mercurial.
