Julien Altaber honed his winemaking skills with biodynamic pioneers Catherine and Dominique Derain in Saint Aubin, Côte de Beaune. In 2007, with the assistance of the Derain's, he was able to establish his own winery, Domaine Sextant, in St. Aubin. Farming is low intervention, organic and biodynamic, with a “hands-off cellar work” approach. Fermentation is spontaneous with native yeasts, wines are unfined, unfiltered with zero added sulphur. Red violet in colour, very aromatic; with sour cherry, wild berries, wildflowers, caramel, apple, forest floor, clay minerality and a wisp of roasted poblano pepper. Wild berries, orange marmalade, cranberry, earth and roasted poblano are layered over black tea tannins and good acidity. Wild berries, a trace of baking spice, and a whisper of rosemary linger on plush finish.
