2016 Domaine Sébastien Dampt - Chablis 1er Cru Les Vaillon (87 pts) @sebastien .dampt_chablis @winehousesf · 🙋‍♂️ What is the hallmark of Chablis wines for you❓· ℹ️ This wine was tasted double blind @ungrafted _sf in San Francisco. Always fun to have an MS humble me 🤓. The wine is 💯 Chardonnay from the Premier Cru vineyard of Les Vaillon in Chablis. The vines are around 60 years old. The fermentation took place in stainless steel· 👁 Pale lemon color· 👃 Medium intensity on the nose. Aromas of white peach, acacia, yogurt, lees, green apple, green pear, and lemon peel· 👄 The wine is dry, medium+ acidity, medium alcohol (12.5%), and medium- body. A medium- length finish of green apple and pear· 🧠 Blind Tasing Logic - The nose shows clear lees aging with aromas of yogurt and some terpenic aromas of white peach. Green orchard fruit leading me to believe that this didn't go through MLF. It seems like it may have been harvested early as well. No noticeable oak. This all drove me to 2017 Alto Adige Pinot Grigio. Many laterals like Muscadet would have higher acid. Wrote down Chablis as a lateral· 🔔 Missed the wine, but happy to have had it my laterals. I really didn't think this was Chablis, missing some of that classic chalky "mineral" reduction. In hindsight there should have been a slight bitterness to it, if it was Pinot Gris/Grigio. Not my favorite expression of Chablis, but enjoyable none the less· 😎 In Blind We Trust
