NV Domaine de Bichery - Les Fontaines Extra Brut Rosé Champagne @domainedebichery · ℹ️ This wine is from a single vineyard, Les Fontaines, in the Côte de Bars subregion of Champagne, France. The vines were planted in 1980 on Portlandian Limestone and farmed organically. The wine is labeled as non-vintage, due Champagne minimum aging requirements for vintage Champagne, but all of the grapes are from the 2016 vintage. The wine is 85% Chardonnay and 15% Pinot Noir. The Pinot Noir was added as still red wine - rosé d'assemblage. Grapes are hand-harvested at optimal ripeness with native yeast fermentation (40% neutral oak and 60% stainless steel) for the base wine. Aged on the lees for ~30 months under crown cap. Bottled with 2 g/l of dosage· 👁 Pale ruby color· 👃 Medium intensity on the nose. Aromas of floral, acacia, high-end hand soap, strawberry, ripe red apple, orange peel, and saltine cracker· 👄 The wine is dry, high acidity, fine bubbles, medium alcohol (12.5%), and medium body. Decent texture due to the 15% of still red wine. A medium length finish of ripe red apple and floral notes· 🔔 Les Fontaines is a solid rosé Champagne that is balanced and clean. Definitely something that boutique restaurants should be pouring BTG. A husband and wife vigneron team that is making single harvest and single vineyard site Champagnes.
