The estate is self-sufficient and sustainable; the Schmelzer family cultivates all of their food, and water is sourced from a well on their land. Soil is a mix of gravel, sand and chalk. “Hand picked, rubbed, not pressed, only the must is used, fermentation on the mash, no pure yeast is added but only fermented with the grapes’ own wild yeast, 12 months of maturation on the fine yeast in large oak barrels (2500 l)” unfined, unfiltered, no added S02. Inky red violet in colour, with aromas of blueberry, raspberry, cedar , candied violet, forest floor and white pepper. Jammy blackberry, blueberry and crushed black peppercorn are framed by grippy tannins and tangy acidity. A vein of black current runs thru to the spice and earth driven finish.
